What you’ll need

Ingredients

  • 3/4 cup oat flour
  • 1 cup almond flour
  • 1/4 cup arrowroot starch
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp lite coconut milk
  • 6 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 cup blueberries

How to make them

Instructions

    Preheat the oven to 350°F.

    Mix the oat flour, almond flour, arrowroot starch, baking powder, and salt together.

    Mix in the coconut milk, maple syrup, vanilla extract, and lemon juice. Don’t over-mix.

    Add the blueberries.

    Pour the batter into 6 lined muffin cups.

    Bake for 20–25 minutes.

    Take the muffins out of the oven and let them cool down.
